Why choose Saucback
Our clients speak best of us
Nicolas B. – Toulouse
"I thought 5.5kg of boneless ham would last several weeks. With my family of food lovers, it only lasted 10 days! The size is generous, easy to slice, and the taste is there from the first cut. 9 months of maturing in Auvergne at 750m, it gives a fresh and fragrant ham that everyone loves. Vacuum-packed delivery was impeccable."
Céline R. – Lyon
"The 9 months of aging result in a milder, less salty ham, truly accessible to everyone, including children. The texture is tender and moist, the taste subtle with lovely floral notes characteristic of the Auvergne altitude. At €154.99 for 5.5kg deboned, it's excellent value for money for real PGI Auvergne."
Laurent M. – Bordeaux
"One might think that 9 months is 'short' for a quality ham. Think again! The altitude of 750 meters compensates and enhances the maturation – the pure air of the Auvergne mountains brings a unique freshness and delicacy. The meat is pink, delicate, and melts in your mouth. A ham that I regularly order for everyday use without ever getting tired of it."

Auvergne Boneless PGI Ham, 5.5kg, Matured 9 Months

DESCRIPTION
Auvergne does not produce its hams like others. Here, altitude, pure air, and time do the work.
While other hams leave the factory in a few weeks, this one spends a minimum of 9 months maturing slowly in the mountains — not a day less.
This Auvergne PGI Ham is certified by the European Union: French pork,
aged in Auvergne according to the traditional methods of the region.
Prepared with pork, salt, spices, and pepper, then entrusted to the expert hands of Auvergne artisans.
Mountain air, temperature, natural humidity — everything contributes to this sweet, balanced, and deeply refined flavor.
Boneless, gluten-free, ~5.5 kg. An entire region on your plate, impossible to reproduce elsewhere.
TASTING
To fully appreciate the flavors of this mountain ham, a proper tasting is essential.
1. **Bring it to room temperature** a few minutes beforehand – the fat softens and the aromas are released.
2. **Slice thinly** with a slicer for even slices, or with a knife for thicker, rustic slices. Both reveal different textures.
3. **On a platter**: charcuterie and cheese, country bread, semi-salted butter.
Ideal for large gatherings.
4. **Wine pairing**: an Auvergne red (Côtes d'Auvergne, Boudes), a Saint-Pourçain, or a mineral white.
A generous piece, perfect for delighting family and friends – or as a gift.
CONSERVATION
Boneless ham should be stored in the refrigerator.
**Before opening:** vacuum packaging guarantees freshness and extended shelf life.
**Once opened:** wrap the cut side in plastic film and store in the refrigerator. It will keep for several weeks under good conditions.
**For slicing:** a slicer makes it easier to cut a piece of this size, but a ham knife works wonders for rustic slices.

The entry-level ham… that’s anything but entry-level! Franck D. – Clermont-Ferrand
"I started with the 9-month aged ham before exploring SaucBack's other aging processes. And honestly, for a 9-month aged ham, it's amazing. The IGP Auvergne certification guarantees a true regional product, aged at an altitude of 750m with French pork. The meat is tender, the taste delicate and fresh. Perfect for those discovering Auvergne ham!"
Fresh, delicate, ideal for the whole family Céline R. – Lyon
"The 9 months of aging results in a softer, less salty ham that is truly accessible to everyone, including children. The texture is tender and succulent, the taste subtle with beautiful floral notes characteristic of the Auvergne altitude. At €154.99 for 5.5kg boneless, it's excellent value for money for authentic Auvergne PGI."
Everyday ham elevated to the rank of exceptional Laurent M. – Bordeaux

The best choice to discover the Auvergne region Sophie T. – Nantes
"My butcher recommended that I start with a shorter aging period to appreciate the character of Auvergne ham without being overwhelmed. This 9-month PGI ham is exactly that: accessible, generous, authentic. French pork raised locally, aged at altitude—you can taste the care put into it from the first slice. A great discovery!"
5.5kg that last... but not for long! Nicolas B. – Toulouse
"I thought 5.5kg of boneless ham would last several weeks. With my family of foodies, it only lasted 10 days! The size is generous, easy to slice, and the taste is there from the first cut. 9 months of curing in Auvergne at 750m, results in a fresh and flavorful ham that everyone loves. Vacuum-sealed delivery was impeccable."
Very good, I'll try the 12-month next time Thomas G. – Strasbourg
"Excellent IGP Auvergne ham, tender, well-balanced in salt, with that characteristic hint of altitude. For a first purchase from SaucBack, I'm very satisfied. The only reason I'm removing a star is that it made me crave the 12-14 month ham — and now I can't stop comparing! Next order already planned."
Frequently Asked Questions
All about Auvergne Boneless Ham PGI 5.5kg Matured 9 Months
Why an Auvergne ham rather than a standard ham?
Auvergne is not like other regions when it comes to charcuterie. The altitude, the mountain climate, the clean air of the volcanoes—everything combines to create unique curing conditions that cannot be replicated anywhere else. A ham cured at an altitude of 750 meters in the winds of the Massif Central develops aromas that a lowland ham simply cannot achieve. It's about the terroir, not the marketing.
What does PGI Auvergne certification specifically guarantee?
The IGP Auvergne is a strict European certification: the pork must be French, the curing must take place in Auvergne at a defined altitude, and the specifications are audited by an independent body. You know exactly where your ham comes from, how it was raised, and under what conditions it was cured. Not a promise — a legal guarantee.
9 months of curing — is that enough for a quality ham?
Absolutely. Nine months in Auvergne at an altitude of 750 metres is not the same as nine months on an industrial plain. The dry, pure mountain air naturally speeds up and refines the drying process. The result is a more tender, more delicate ham, with floral and fresh aromas characteristic of the altitude. The 9-month Auvergne ham is the ideal choice for those who want an accessible ham, not excessively salty, that everyone will enjoy.
What's the difference between this 9-month size and the 12-14-month size?
Both are IGP Auvergne, aged at an altitude of 750 meters with French pork. The difference lies in their maturity: the 9-month ham is fresher, more tender, and milder on the palate—ideal for those who don't like hams that are too dry or too salty. The 12-14-month ham develops superior aromatic complexity, a firmer texture, and a more pronounced finish. The 9-month ham is for your daily gourmet pleasure, while the 12-14-month ham is for your long weekend.
The ham is deboned - what difference does that make to me?
Zero waste, zero complicated technique. No need for a professional ham knife or a jamonero. You place the block on a cutting board and slice — with a thin knife for delicate strips, or with a slicer for even rounds. The boning is carefully done by the producer to ensure no meat is lost.
5.5kg is for how many people?
For an aperitif, allow 40 to 50g per person – a 5.5kg ham can easily serve 110 people on an appetizer platter. For a starter at the table, 80 to 100g per guest, or about 55 people. This is the ideal size for large occasions: family celebrations, weddings, receptions, or simply for enthusiasts who want to enjoy it for several weeks
How do I store it before and after opening?
Before opening, store in the refrigerator in its vacuum packaging. After opening, cover the cut surface with film or a clean cloth and return to the refrigerator. Slice as needed to limit the surface exposed to air. Shelf life after opening: 3 to 4 weeks without significant loss of quality.
How to best enjoy it?
Take it out of the refrigerator 20 to 30 minutes before serving. Slice thinly — the 9-month ham reveals all its tenderness and delicate aromas when thinly sliced. Enjoy plain at first, then on lightly toasted country bread. A glass of white Saint-Pourçain or red Côtes d'Auvergne to accompany it — regional wines with regional ham, it's a natural fit.
Is it gluten-free?
Yes, the Auvergne Boneless PGI Ham aged 9 months is naturally gluten-free. Everyone at the table can enjoy it without restriction.
What is the delivery time for my order?
Your order is shipped within 24-48 business hours in insulated packaging to guarantee freshness upon receipt. You will receive a tracking email upon shipment.
Our customer service is available 7 days a week. Average response time: 24h
