SaucBack is based near Clermont-Ferrand, and Auvergne is at the heart of our selection. Mountain air, altitude, and patience: this is what gives Auvergne charcuterie its character.

Auvergne PGI ham

Protected by a Protected Geographical Indication, Auvergne ham is made from French pork and cured in the mountains. Ours is air-dried at an altitude of 750m: 9 months for a mild flavor, 12 to 14 months for more intensity, and up to 24 months for our Gold Medal-winning farm-raised ham from Paris.

Auvergne dry sausage and salami

Our artisanal dry sausage and two types of dry salami are handmade in Auvergne in small batches, using French-origin pork and natural casings. The curved sausage received a Silver Medal and the straight sausage a Bronze Medal at the Concours Général Agricole.
