This Fuet Espetec Extra strictly adheres to this tradition: selected pork, natural pork casing, slow curing for 3 weeks according to Catalan expertise. Its natural white bloom on the surface is a sign of proper curing. Inside, a fine and melting texture, delicate and profound aromas.

TASTING
To reveal all the delicacy of this fuet, a proper tasting is essential.
1. **Take it out 15 minutes before** — Served at room temperature, it reveals all its delicacy.
2. **Slice thinly on the bias** — With a knife, on the corner of the table, just like in Catalonia.
3. **Spanish style**: on bread rubbed with tomato and garlic, a drizzle of olive oil, a few olives. Or simply as is, for snacking.
4. **Wine pairing** : Cava, Grenache, or a fresh Catalan beer.

What exactly is a fuet catalan — and how is it different from a French saucisson?
Fuet (Catalan for whip) is a cured sausage from Catalonia. Thinner, longer, and lighter than a French saucisson, it is stuffed into a narrow natural casing and cured using a traditional Catalan method that dates back centuries. A more delicate taste, lighter texture, and characteristic crunch when chewed — these are two very distinct products that complement each other on a platter but do not replace one another.
What is Espetec Extra—is that just a trade name?
No. Espetec is the traditional Catalan name for high-quality thin fuet. The "Extra" designation refers to the selection of the best pieces — impeccable natural casing, expert curing, and consistent taste from one piece to the next. It is the premium version of Catalan fuet, the one that Catalans themselves have consumed daily for generations.
The white film on the surface, is that normal?
Absolutely—and that's actually what we're looking for. This white film is a beneficial natural mold (Penicillium) that develops during traditional curing. It protects the fuet, regulates drying, and contributes to the development of its aromas. It's the hallmark of authentic artisanal drying—the exact opposite of a defect.
