TASTING
For an authentic tapas evening, a few simple steps are all it takes.
1. **Take everything out 20 minutes beforehand** — the quarter Serrano and Lomo benefit from being at room temperature.
2. **Slice the 1/4 Serrano** into thin strips (by hand or with a slicer), remove the casing from the Lomo and slice it thinly, and slice the chorizo and fuets into rounds.
3. **Arrange a tapas platter**: pan con tomate, olive oil, Manchego, olives, around the central quarter ham.
4. **Wine pairing**: Rioja Reserva, Albariño, or a Cava Brut.
