Alexandre R. β Paris
"899β¬, I won't deny it, that's a budget. But when you place the first slice on your tongue and it literally melts... you immediately understand. 36 months of curing, Spanish acorns, pure Iberian porkβit's gastronomy in its purest form. A purchase I absolutely do not regret."
Jean-Pierre M. β Bordeaux
"I had the chance to eat Pata Negra in Spain, directly from the producer. SaucBack's is on the same level, no exaggeration. The slices are perfectly marbled, the fat melts in your mouth, and the hazelnut and acorn flavor is ever-present. Impeccable vacuum-sealed delivery. A 10/10."
Sophie & Julien T. β Lyon

DESCRIPTION
There is a hierarchy in the world of ham.
At its untouchable pinnacle sits JamΓ³n Bellota IbΓ©rico β the Pata Negra. A pure-bred Iberian pig, raised free-range in the Spanish dehesas, fed exclusively on acorns and natural pastures during the montanera season. This unique diet transforms the fat in the meat, giving it that oily marbling and a depth of flavor impossible to replicate with any other animal.
Then there's time. 36 months of curing in natural drying rooms. Three years of patience,
during which the meat's natural enzymes develop an aromatic complexity
that experts compare to fine Bordeaux wines. Deboned for your slice, vacuum-packed to preserve every aroma.
This isn't a purchase; it's a gastronomic experience. The absolute king of world charcuterie, on your table.
TASTING
To bring out all the aromas of JamΓ³n Bellota IbΓ©rico, taste it the proper way.
- Take it out 30 to 45 minutes beforehand β at room temperature the fat turns translucent and releases its hazelnut aromas. Never serve it cold.
- Slice it very thinly with a sharp ham knife: almost transparent, bite-sized slices.
- Serve it plain at first, then with toasted bread or a few breadsticks, with nothing that masks its taste.
- Wine pairing: a Manzanilla or Fino sherry, a Rioja Gran Reserva or a brut Champagne.
CONSERVATION
Sealed in its vacuum pack: keep it in the refrigerator or in a cool, dry place until the date shown on the pack.
Once cut: cover the cut surface with cling film or a clean, lightly oiled tea towel and keep it in the refrigerator. Only slice what you are going to eat.
Before serving: take it out 30 to 45 minutes beforehand so the fat regains its melting texture.

Frequently Asked Questions
All about Boneless Pata Negra Iberian Bellota Ham Aged 36 Months
What makes Pata Negra the best ham in the world?
Three things come together: the Iberian breed (the black pig with black hooves, the pata negra), an acorn diet during the montanera (the acorn season in the oak forests) and long curing β 36 months for ours. It is this combination that puts Bellota IbΓ©rico in a class of its own: a reality you can taste, not a marketing claim.
What is *montanera* β and why is it so important?
La montanera is the period from October to March during which Iberian pigs are released into the dehesa β the Holm oak and cork oak forests of the southwestern Iberian Peninsula. They travel up to 14km per day and feed almost exclusively on acorns (bellotas). These acorns are rich in oleic acid β the same as in olive oil. The result: exceptionally healthy and flavorful intramuscular fat, which melts at hand temperature and gives the ham its incomparable hazelnut and chocolate aromas.
What exactly does 36 months of aging bring?
36 months, three times longer than a standard Serrano. Throughout this time, the meat concentrates, fat infiltrates every muscle fiber, and enzymes transform proteins into complex aromas. The result: a silky texture that literally melts in the mouth, lingering notes of hazelnut, dried fruit, and undergrowth, and a deep red color marbled with pearly white. A ham to be eaten slowly, in silence.
How are Bellota pigs fed?
During the montanera, Bellota Iberian pigs roam freely, feeding on acorns and grasses in the dehesa. It is this diet, governed by the Spanish standard for Iberian ham, that gives the fat its richness in oleic acid and its hazelnut aromas.
The ham is boneless β what does that mean for me?
A Pata Negra on the bone requires a professional jamonero and a mastered cutting technique. Boneless, you can access all the richness of this exceptional ham without constraint. Place the block on a board, slice thinly with a knife β and enjoy. Zero waste, zero frustration, 100% pleasure.
How to enjoy it to the fullest?
Remove it from the refrigerator 45 minutes to 1 hour before servingβBellota needs time to fully express itself at room temperature. Slice it into almost transparent stripsβthe fat should glisten slightly under the light. Serve plain, without bread or accompaniment initially, to appreciate the pure aromas. Then with a Manzanilla de SanlΓΊcar or a glass of Cava to enhance the experience.
How to store it before and after opening?
Before opening, store in the refrigerator in its vacuum packaging. After opening, cover the cut surface with a clean, lightly oiled cloth and place in the refrigerator. Slice as needed. Storage after opening: 3 to 4 weeks. A product of this quality deserves to be consumed gradually, taking the time to appreciate it.
Is it gluten-free and allergen-free?
Yes. Pata Negra Iberico Bellota Ham is naturally gluten-free and free of major allergens. A pure product in every sense of the word.
Who is Pata Negra a good gift for?
For someone you want to make a real impression on. A significant birthday, a wedding, a birth, a promotion, a retirement β or simply because some people deserve the best without any particular occasion. This is the ultimate gourmet gift, one that will be remembered long after it has been eaten.
What is the delivery time for my order?
Your order is shipped within 24-48 business hours in carefully insulated packaging to guarantee the freshness and integrity of this exceptional product upon receipt. You will receive a tracking email upon shipment.
