TASTING
To arrange the most beautiful platter, a few careful steps are enough.
1. **Take everything out 20 to 30 minutes beforehand** — each piece, from chorizos to Lomo, reveals its aromas at room temperature.
2. **Prepare each product**: remove the casing from the Lomo and slice it thinly, the Serrano in chiffonnade, the chorizos in thin rounds, sausage and cured sausage thicker, the fuet diagonally.
3. **Arrange a large platter** in sections: the mild on one side, the spicy on the other, the noble pieces (Lomo, Serrano) highlighted. Bread, pickles, olives, cheese.
4. **Wine pairing**: plan for a red (Rioja, Côtes-du-Rhône) and a sparkling wine (Cava) to cover the entire palette.
Ideal for 10 to 15 people. The evening promises to be memorable.
CONSERVATION
Keep all products refrigerated; Lomo and Serrano in the refrigerator.
**Before opening:** vacuum-packed products kept refrigerated.
**Once opened:** wrap cut parts in plastic film or dry pieces in a tea towel, then refrigerate. Consume Lomo and Serrano within 5 to 7 days, dry pieces within 1 to 2 weeks.
**Lomo casing** is not edible — remove it before slicing.
